Ingredients
  

  • 2 oz Dry Gin
  • 1 oz Fresh Squeezed Lime Juice
  • ¾ oz Simple Syrup
  • 5 Fresh Mint Leaves
  • oz Club Soda
  • Garnish: Lime Wedge and Mint Sprigs

Instructions
 

  • Add first 4 ingredients to a shaker and shake.
  • Double strain into a Collins glass filled with crushed ice.
  • Top with club soda.
  • Garnish with lime wedge and mint sprigs.

Pork Rind Encrusted Pork Tenderloin

Equipment

  • Baking sheet or pan for the tenderloin
  • Spoon for the mustard

Ingredients
  

  • 4-5 TBSP Dijon Mustard
  • 1 Package Pork Tenderloins Most come with two loins. Try to make sure they are close in size if you can.
  • 4-5 TBSP Pork Rind crumbs We use Pork King Good. You can also make your own by crushing them yourself.

Instructions
 

  • Pre-Heat oven to 375 F.
  • I always rinse my loins and dry using paper towels.
  • Thoroughly coat the top and sides of the loin(s) with Dijon Mustard.
  • Cover the Dijon Mustard with your pork rinds crumbs. Be sure not to “double dip” the spoon after it has touched the meat.
  • Bake 30-40 minutes depending on the size. It's always best to start checking them after 30 minutes. (Depending on size – or until it has reached an internal temperature of at least 145-150 F). I recommend using a probe thermometer. Let the pork rest for five minutes, then carve into slices and serve.

A wonderful all natural alternative to Rose's Sweetened Lime Juice.

Equipment

  • Glass Jar
  • Citrus Peeler
  • Fine Mesh Strainer

Ingredients
  

  • 6 Limes Limes vary greatly in size. You are looking for a minimum of 4 oz of lime juice for a small batch of lime cordial. Double if you would like to make a bigger batch.
  • 4 oz Sugar You need equal parts of sugar to lime juice.

Instructions
 

  • Wash and dry limes.
  • Peel with a citrus or vegetable peeler, removing as little of the pith as possible.
  • Cut limes in half and juice.
  • Measure equal parts of sugar to juice.
  • Add juice and sugar to mason jar and stir until sugar is fully dissolved.
  • Crush peels up in your hand to release the oils and add them to the juice mix.
  • Cover and refrigerate for 12 to 24 hours.
  • Strain the cordial to remove the lime peels. Place in a covered glass container and return to refrigerator. Cur for another day before using. Cordial will keep for up to one year.
