Equipment

  • 1 Liter Glass Bottle with a cap
  • Coupe Glass or Old Fashioned Glass

Ingredients
  

  • 11 oz 100 Proof Gin
  • 11 oz Campari
  • 11 oz Sweet Vermouth

Instructions
 

  • Pour ingredients into a 1 liter glass bottle and place cap on the bottle. Shake the bottle to mix ingredients and store in a cool dark place for at least a week.

Served

  • Stir cocktail over ice, strain straight up in a chilled Coupe Glass or server with a large ice cube in an Old Fashioned Glass.

Equipment

  • Quart Jar with lid
  • 2 to 3 Glass Liter Bottles
  • Strainer

Ingredients
  

  • 10 Meyer Lemons
  • 1 quart High Proof Grain Alcohol
  • 5 cups Water See instructions for exact calculation
  • 5 cups Sugar See instructions for exact calculation

Instructions
 

  • Remove rind of 10 lemons with a citrus peeler, being careful to minimize the pith.
  • Place rind and grain alcohol in a large glass bottle or jar and pour in alcohol. Cover and let infuse for at least two week, shaking daily. Infusion is done when the lemon peels have lost most of their color. Alcohol should be bright and saturated yellow.
  • When liquor is infused, strain limoncello into a clean class jar, discard the lemon peels. Strain again using a fine mesh sieve lined with a coffee filter.
  • Weight strained alcohol to determine weight so that you may calculate the proper portion of sugar and water required. Limoncello should be between 28% to 32% Alcohol by Volume.

    2. .95 Alcohol Content = (190 proof of Everclear /2)/100
    3. .28 Alcohol by Volume = ((.95 ABV *697 ml)/Total Drink Volume)

    5. Simple Syrup Volume 1668 ml = Total Drink Volume 2365 ml – 697 ml Alcohol Volume
    In 2020, I used a 50% water to 50% sugar by volume recipe. This made for a very sweet Limoncello.
    In 2021, I am going to combine 75% water to 25% sugar by volume recipe. I will update on how this combination works out.
    You can reduce the sugar and add more water if you would like it less sweet.
  • Combine sugar and water in a saucepan set over medium heat until the sugar is dissolved. Remove from the heat and let cool, then pour into jar with lemon liquor. Secure lid and return to cool dark location to mellow for at least 2 more weeks.

Ingredients
  

  • 1½ oz Blanco Tequila
  • ½ oz Ancho Reyes Chile Ancho Liqueur
  • 1 oz Fresh Pressed Raw Pumpkin Juice
  • ¾ oz Pumpkin Syrup
  • ¾ oz Fresh Squeezed Lime Juice
  • 4 dashes Bitter Truth Aromatic Bitters

Pumpkin Syrup

  • 2 part Raw Pumpkin Juice
  • 1 part Sugar

Garnish

  • Pumpkins Salt dehydrated pumpkin and salt

Pumpkin Simple Syrup

  • Combine 2 parts raw pressed pumpkin juice in a sauce pan with 1 part sugar by weight. Heat on low and stir until sugar is dissolved.

Cocktail

  • Rim coupe glass with pumpkin salt
  • Add all ingredients in a cocktail shaker. Add ice and shake until chilled.
  • Double strain into coupe glass

  • 2 oz Applejack preferably Laird's
  • ½ oz Amaro Nonino strained
  • ½ oz Pumpkin Syrup
  • ½ oz Fresh Pressed Raw Pumpkin Juice
  • 1 Whole Egg
  • Garnish Freshly Grated Nutmeg

Pumpkin Syrup

  • 2 parts Fresh Pressed Raw Pumpkin Juice
  • 1 part Sugar

Instructions
 

Pumpkin Syrup

  • Add raw pumpkin juice and sugar to a sauce pan and heat until sugar is dissolved.

Cocktail

  • Fill coupe glass with ice and water to chill.
  • Combine ingredients in cocktail shaker.
  • Dry shake ingredients for about 20 seconds.
  • Add ice and shake until the outside of the shaker is frosty, about 20 seconds.
  • Double strain into coupe glass
  • Grate nutmeg on top

Pumpkin Rice Krispie Treats

These Pumpkin Rice Krispie Treats don’t have any pumpkin in them but rather they’re just shaped to look like a pumpkin so you still get that same sweet vanilla marshmallow flavor.

Ingredients
  

  • 6 cups 6 cups rice krispies cereal
  • 3 TBSP Salted butter, If you only have unsalted, add a pinch to the melted butter.
  • 10 ounces mini marshmallows Or, 40 large
  • 5 Pretzel Sticks–use broken ends about 1 inch or so
  • 10 Green Airheads, or Green Fondant
  • 1 Spray Non-stick cooking spray I use gloves and spray them first.
  • TBD drops Orange gel food coloring to desired color I used a mix of red and yellow to get the color i wanted as I did not have orange.

Instructions
 

  • Measure out rice krispies cereal and pour into a bowl. Melt butter in a 4 quart non-stick saucepan or pot over medium-low heat. 
  • Add marshmallows and stir and as they begin to melt start adding in the gel food coloring until desired color is achieved. Stir constantly until marshmallows have melted. 
  • Remove from heat then immediately pour in rice krispies cereal and gently stir and fold with a spatula until cereal is evenly coated. Let mixture cool slightly (until it's cool enough to handle with your hands).
  • Spray hands with non-stick cooking spray then shape rice krispie treat mixture into balls about the size of a baseball, then insert 1 piece of the pretzel rod into the top center and reshape the pumpkin as needed. Transfer to a plate or dish sprayed lightly with cooking spray.
  • Beginning on one side of the airhead candy cut out a leaf shape with clean scissors then use the remaining portion of the piece of candy to roll and shape into a thin rope shape then twist into a vine shape (or just shape the fondant accordingly, no cutting required).
  • Place candy on the sides of each pretzel on the pumpkin (as pictured). Repeat with remaining candy. Store in an airtight container.
